Incoming material and preparation
Which lime species and size grades will arrive, and can the chosen feed arrangement handle small fruit consistently?
How much characteristic rind flavour is wanted, and how will seed fragments, bitterness and final juice clarity be assessed on the intended raw material?
Define incoming state, variety, maturity, accepted defects and supply interruptions in the purchasing brief. A proposed line should be demonstrated with representative commercial lots rather than a single ideal sample.
Lot inspection
Inspect limes and separate damaged or unsuitable lots.
Record fruit dimensions and seed incidence; a small lime should not disappear through transfer gaps designed for larger citrus.
- Equipment duty: Receiving table and small-fruit grading conveyor
Wash and rinse
Remove surface debris and deliver clean fruit to extraction.
Check that the smallest accepted fruit remains controlled through the washer and elevator rather than relying on a nominal conveyor width.
- Equipment duty: Small-fruit washer with appropriate retention
Extract without excess rind pickup
Release the juice with controlled rind and seed contact.
Compare taste after the intended dilution or formulation, because the product may be sold as an ingredient rather than a ready-to-drink juice.
- Equipment duty: Lime-compatible extraction unit
Separate seeds and coarse tissue
Remove the coarse fraction while meeting the pulp target.
Finishing should be demonstrated with the highest expected seed load, with a clear inspection and reject-removal procedure.
- Equipment duty: Seed trap and juice finisher
Review the blend basis
Measure and document the approved lime juice lot before any blend adjustment.
Distinguish natural juice from a formulated drink or sauce ingredient; added water cannot be counted as recovered fruit juice.
- Equipment duty: Sanitary mixing tank and sample points
Connect the preservation route
Move finished juice toward the selected package and storage system.
A concentrate or blended beverage is a separate downstream scope with its own handling and product-identity requirements.
- Equipment duty: Closed transfer and defined downstream interface
Specify preservation around the actual product
Confirm the measured product composition, particulate load and intended storage chain before the treatment and filling arrangement is selected.
The juice ingredient route needs its own validated process. A drawing, a heat-exchanger name or a successful extraction trial does not establish a safe treatment schedule or a finished shelf-life claim.
- Equipment duty: Selected treatment unit, controlled transfer and process instruments
Fill, identify and verify the packed ingredient
Match the approved ingredient to the selected package and handling conditions. Record the production lot and the conditions required by its defined distribution route.
The filling boundary belongs in the project specification: container format, product-contact interface, filling hygiene, storage and the downstream user’s receiving requirements must agree before commercial acceptance.
- Equipment duty: Compatible filler, packaging interface and lot-identification station
Quality checks along the process
Review acidity, aroma, suspended solids and bitterness after consistent sample preparation. Keep variety and extraction setting with each sample so comparisons can be reproduced.
Define the sampling location, sample preparation, measurement method and acceptable variation. Retain traceable comparisons through the intended downstream route; a favourable immediate sample is not proof of storage stability.
Equipment modules and selection
| Equipment module | Process role | Selection basis |
|---|---|---|
| Receiving table and small-fruit grading conveyor | Control the incoming-material presentation before preparation. | Check actual lot condition, peak arrivals and the accepted size range. Provide a sample/reject point that can be operated without obstructing feed to the next machine. |
| Lime-compatible extraction unit | Juice extraction and peel separation. | Extraction contact and fruit dimensions should be evaluated together. Confirm the accepted pulp and peel character before comparing recovery. A separate rind-oil operation needs its own specification. |
| Seed trap and juice finisher | Create the agreed intermediate condition for downstream equipment. | Agree an acceptance sample, a measurable particle or separation target and a reject-handling method. Select contact parts and access arrangements after trials with representative material. |
| Product buffer and transfer system | Connect preparation, treatment and filling without assuming all sections run at the same rate. | Record viscosity, particle character, temperature envelope and expected stoppages. Confirm drainability, sampling points and how unaccepted or interrupted product is identified and handled. |
| Preservation, packaging and cleaning interfaces | Complete the declared process boundary. | The quoted scope should identify included instruments, services, containers, hygienic connections and validation responsibilities. An item list without these interfaces is not a complete line specification. |
Packaging and storage interfaces
Specify whether the juice ingredient is supplied as a chilled, frozen, otherwise treated or aseptically handled ingredient, as applicable to the developed product. Package material, closure, fill conditions and distribution are a connected system. Any claimed ambient stability or shelf life requires product- and package-specific validation; the process introduction does not set treatment temperatures or holding times.
Product and residue streams
Collect peel, seeds and coarse finisher rejects separately. Identify whether any rinse water, peel oil or secondary extraction stream is excluded from the declared juice product.
Cleaning circuits and physical access
Small seeds and oily rind residues require accessible traps and screens. Avoid treating the washer, rind waste and sanitary juice tank as one interchangeable cleaning circuit.
Assign cleaning responsibilities to the open preparation zone and the closed product circuit separately. Confirm which parts require removal or inspection and how cleaning effectiveness will be demonstrated with the actual product soil.
Inputs for the engineering brief
- Use the smallest and most heavily seeded accepted lots in a feeding and finishing trial; review the result in its intended final formulation.
- Provide the intended finished-product specification, representative raw-material samples, daily operating pattern and seasonal peak load.
- Identify available utilities, factory layout, drainage, reject collection and the exact inlet/outlet conditions of equipment supplied by others.
- Agree trial acceptance criteria and define the preservation, filling, cleaning and commissioning responsibilities before finalising the equipment scope.
Compare the preparation and concentration basis
A fresh-tomato paste line connects receiving and break treatment with skin/seed separation and a specified concentration duty. Other fruit and vegetable products can need different preparation and texture controls, and a concentrate is not simply any puree put through an evaporator.
Compare the tomato pulp-finishing and evaporation duties below with the product stream described on this page. The raw-material specification, solids measurement, viscosity and preservation/package interface must define the actual configuration.
Sources and processing scope
The references support these material and processing considerations. The actual equipment, process conditions, preservation method and packaging interface follow the specified raw material and finished product.

Questions about this equipment and process
Can ordinary large-citrus handling be used for lime?
Only after testing the accepted fruit sizes. Retention, transfer gaps and extraction contact need checking with small fruit; an extractor’s general citrus description does not establish the complete handling arrangement.
Is lime juice the same product as a lime beverage base?
No. A beverage base may include other ingredients or a different concentration. Record the product identity and formulation separately from the extraction mass balance and equipment duty.
What should a useful lime trial establish?
Use the smallest and most heavily seeded accepted lots in a feeding and finishing trial; review the result in its intended final formulation. Record incoming material, accepted feed, finished ingredient and each reject stream separately. Keep settings, samples and analytical methods with the trial record so the result can be compared with subsequent seasonal lots.
